About the rosemary & lemon salt

The rosemary grows against the south wall of the sluice house, in soil that has had a century of salt spray. We cut it in late summer, dry it on the same racks as the flakes and rub it through the salt by hand with lemon zest dried the same week.

Each batch is 20 kg, which lasts about a month in the shop. When it sells out, the next one is two weeks away — sign up to the list on the contact form and we will tell you when it is back.

Rub it into a leg of lamb before it goes in the oven, toss it through potatoes as they come out, bake it into focaccia, or run a lemon wedge round the rim of a glass and dip it.

Use it for

  • Roast lamb, chicken and potatoes
  • Focaccia and flatbreads
  • Rimming a glass
We finish every plate that leaves the pass with Lowfield flakes. The crystal holds its crunch on a hot steak for the walk to the table.
