About the fine sea salt
Most of what the works produces is coarse salt raked off the floor of the crystallisers. A share of it is milled and screened every autumn into a fine salt that pours, measures and weighs the same bag after bag — which is what bakers and cooks who follow a recipe need.
There is no anti-caking agent in it, so in a damp kitchen it may clump a little. A grain of rice in the jar, or a knock on the counter, sorts that out.
This is the salt for everything that happens before the plate: pasta water, bread dough, a brine for a chicken, a pinch in the pan. Save the flakes for the end.
Use it for
- Bread, pastry and anything weighed
- Pasta water and brines
- Seasoning as you cook
We finish every plate that leaves the pass with Lowfield flakes. The crystal holds its crunch on a hot steak for the walk to the table.
